I was experimenting with chick pea (garbanzo) flour couple months ago. Its has a very strong chick pea taste, but I love chick peas so I was supper happy. I bought a pack of 6 from amazon, it was way cheaper than the stores.
Here is my recipe of chick pea pizza crust!
Chick Pea Flour Pizza (Gluten Free)
2/3 cup garbanzo flour
1/2 cup water
1/2 teaspoon herbs (oregano, basil, mint)
1 tablespoons extra virgin olive oil
2 tablespoons chopped tomatoes
1 tablespoon onion, finely chopped
3 tablespoons fat free feta cheese, grated
1/4 teaspoon black pepper
Preheat your pan.
Sift the chickpea flour into a medium bowl.
Slowly add 1/4 cup of the water, whisking constantly to form a paste. Beat with a wooden spoon until smooth. Whisk in the remaining 1/4 cup of water and let the batter stand at room temperature for 30 minutes, then stir in the herbs.
Heat 1 tablespoon of the olive oil in a 12" nonstick ovenproof skillet. Stir the batter once, pour it into the skillet and drizzle the remaining tablespoons of olive oil on top.

Tabouli
Tabouli is my favorite salad hands down. Its a famous Lebanese salad. Its usually eaten as an appetizer, I like to eat it as a meal.
Parsley is amazing and full of good nutrients. Its hard to clean and chop that's why I do not make this salad very often, They should make a clean and chopped parsley salad bag ;).
I decided to chop the parsley with a food processor (since I am lazy) and I usually add the burgul in a deep bowl with some water and microwave it. The burgul will cook instantly.
3 bunches finely chopped parsley
2-3 tablespoons fine burgul (cracked wheat)Chopped firm tomato 1/2 onion choppedDrizzle of Virgin olive oil1/4 cup fresh lemon juice (you can add more or less)
Pinch of salt
I usually let the burgul cool for a bot before mixing it with the salad. I first add the parsley then tomatoes, onions, burgul, lemon and olive oil. I try to not use salt, but you can use it for extra flavor. Mix well a chill in the fridge.
I love to eat it with whole wheat pita bread or with some tortilla chips.
* you can find Burgul in the stores, in the middle eastern isle. you can use cooked quinoa, I haven't tried it yet.

Chia Breakfast Bowl
I always saw recipes using chia seeds, I always wondered what it was. I am a fan of flax seeds, and I use it in my baking and smoothies. I started to read about the benefits of chia seeds and I was amazed. I went to the grocery store and I purchased it and started to look for recipes and how I can include it in my food.
I came across the breakfast bowl and it looked supper easy and delish.
I used:
2 tbsp of chia seeds
1 mashed banana
1/2 cup of coconut milk
Raisins and walnuts for garnish
I mixed the chia seeds, mashed banana, and milk in a bowl and left it covered in the refrigerator over night.
I was supper excited to try it in the morning. Let me tell you it tasted so good, and it had a pudding consistency. I did not add sugar or honey, i only used the sweetness from the banana.
It was very fulling and I was satisfied.

No sugar added Oatmeal cookie
Who ate so many cookies, chocolate, and sweets over the holidays? I know I did!! I am very weak for sweets. I love the fancy chocolates boxes I got as a gift over the holidays. Since its once a year that I eat this much sweets, its ok to indulge myself every once in a while. That's why its time to go back to my normal life and start baking with no sugar!
No sugar added Oatmeal cookie
2 cups oats
1/4 + more soy milk
1/4 cup raisins
orange zest
1 tbsp cinnamon
1tsp vanilla
I used a food processes to make the oats finer. You can omit this step. I mixed all the above ingredients. use a sprayed pan (I sprayed it with coconut oil) formed small size balls and pushed it a bit with the back of a spoon. Bake in a preheated oven at 350F for about 8-12 minutes.
Made 6 cookies, 120 calorie each.

Make your home smell good for the holidays
I love when my place smell good all the time. During the holidays I love the smell of cinnamon, I use it in my cooking and with my green tea. for this home scent, I decided to chose the smell of cloves, cinnamon sticks and lemon peal (squeezed lemons). I placed them all in a small sauce pan and added water. On low heat I let it simmer for a while and surprisingly my entire place smelled so good, it even made me crave for some cinnamon green tea!
Quinoa Dolmas (Middle Eastern Style)
I made today my first Middle Eastern dolma made from quinoa. I grew up eating dolma made from unhealthy ingredients, red meat, white rice, lard, and table salt. It used to be my favorite meal during the holidays. I always crave it and since I have changed my life style and the way I eat, I decided to make a healthy version of dolma. It tastes the same, without the bad stuff! I am actually proud of myself making it. It was my first try and it was a hit!

Walnuts Apple Pie with Oat Pie Crust
I love sweets, and warm apple pie. Before thanksgiving I was looking online for apple pie recipes. They all looked so good and it made me crave it even more. The only problem was the high calorie, fat, sugar, and crabs they had. I started searching again to find a healthier recipe for apple pie to take ideas from. I came across an awesome recipe from the Sugar Free Mom. I decided to make a gluten free crust instead of the whole wheat crust.
Let me tell you, my oat crust was so good. I even ate apple pie for breakfast the next day, oats and apples (sounds like a healthy breakfast to me :) ).
Oat Flour Crust:
2 cup 1/2 gluten free oat four (I used Bobs Red Mill)
8 1/2 tbsp cold water
4 tbsp coconut oil (or vegetable oil)
small pinch of salt ( don't add more since oats tend to be salty)
In a bowl, stir together all ingredients. Pat dough into a sprayed pie plate. Press pastry between fingers to make an edge.
Apple Pie Filling:
6 granny smith apples, peeled and sliced thin
1 small lime juice
1 tsp ground cinnamon
1/4 tsp nutmeg
2 tbsp oat flour
2 tbsp honey (or more if desired)
1/4 cup chopped walnuts
1 egg white (omit for a vegan pie)

of one lime over sliced apples and toss. Toss over cinnamon, and nutmeg, mix
well. In a sauce pan, take 2/3 of the apples and cook over medium heat until
tender, it takes about 10 minutes. Remove from heat and stir in the rest of the
sliced apples. Add the oat flour to the apples and stir to combine. Let it cool
for 30 minutes. Preheat the oven to 425 degrees. Add apples into prepared
bottom pie crust, then cover apples with chopped walnuts and prush with egg whites. Bake 40 minutes
or until browned. Pour the honey on top while it’s still worm. Let rest 20
minutes before slicing.
The pie smelled so good to the point I was not able to hold of people to take more pictures.
