Coconut Custard Pie

Its November! You know what that means... Its pie time!! I am counting down the days till Thanksgiving. Its one of my favorite holidays. Good food, good company, and amazing pies. Last year I decided to make oreo dirt pudding pie. It was sinful and so good. I made two pies, and there were no left overs the next day, I guess that's a good sign right? This year I am planning to go a light on pies. I will be making coconut custard pie and the lighter version of oreo pudding pie, and may be another pie. :) I will keep you updated.

Coconut Custard Pie







4 Egg whites
1/4 cup Extra Virgin Coconut Oil
1/2 cup Oat Flour
1/2 tsp. Salt
1.5 tsp Vanilla
Scant 1/2 tsp Baking Powder
2 cup soy Milk (or any milk you like)
Unsweetened shredded coconut 





Mix everything together, then pour into a sprayed 9″ pie pan. On top, sprinkle sprinkle unsweetened shredded coconut. Bake on 350F for 40 min.
