Happy Fall

Happy fall everyone :). Its absolutely my favorite season. Enjoy it, eat lots of pies, drink pumpkin spiced lattes and chai, take a long hike/walk and enjoy what natures has to offer!

I have to admit, Trader Joe's made me very happy when I saw they have a full shelve with new products that goes perfectly for the fall season.
I was thrilled to see pumpkin spice chai! and pumpkin rooibos herbal tea! I love you Trader Joe's, and love all your weird and unexpected items :)

Mini Blueberry Pie

Tomorrow is the official day of fall. Who is ready for some pies?? I AM!
I love fall so much. It is my favorite season. beautiful colorful trees, pumpkin spice latte, hot apple cider, and pie! I have come up with a less-guilt sugar free, fat free, dairy free pie. I hope you make it an enjoy it. Its supper easy, fast, plus its very cute. :) 

Mini blueberry pie (Supper healthy)

1 ½ cup oats
1 ½ ripe bananas
3 tbsp water
½ tsp vanilla
1 tsp baking powder
½ tsp baking soda
2 tbsp shredded coconuts
1 tbsp corn starch
1 cup frozen blue berries (or any berries you like)

In a bowl, mash the banana very well and add the oats, vanilla, water and shredded coconut. Mix till everything is combined. Using a cup cake pan, divide mixture evenly pressing mixture into bottom and up sides of cupcake cups to form the crust. If the mixture is too sticky, moisten your fingers slightly with water to make forming them easier. Bake on 350 for 10-15 minutes. 

In a sauce pan add the blueberries with 2 tbsp water. In a separate bowl add the corn starch with 1 tbsp water and stir very well, and then add to the sauce pan. On a low heat cook the blueberries till it thickens. Add the mixtures to the baked oat crust and let it cool completely before eating. 
I don't think you need to add sugar because the bananas are sweet, so they balance the sourness of the blueberries. 

Yields 11 pies 120 calorie each. Enjoy it -Rosene :)

Heart Healthy Oatmeal Cookies (Gluten-Free)

I am so excited to finally post my first recipe!! hooray! I have been working to make this blog happen for a while. It seemed like I always have something to do, but two weeks ago I said, That's it no more excesses! hop to it.  I chose this oat meal cookie to be the first recipe I post. I love oat meal way to much! you can tell from the name of this blog :). I hope you enjoy this recipe, and I cant wait to share more of my creations and inventions. 



Heart Healthy Oatmeal Cookies 

1 and ½ cups of oats
½ mashed banana
¼ cup unsweetened apple sauce
1/8 TSP vanilla
¼ TSP baking soda
1 TBSP chopped walnuts
Pinch of cinnamon
¼ TSP baking powder
1 egg white
Orange zest

Preheat the oven to 325F. Mix the mashed banana, apple sauce, vanilla, egg whites, cinnamon baking powder and baking soda. Add the oats gradually and combine all ingredients. Spray the baking sheet with olive or coconut oil. Form a ball shaped cookies; press lightly with a fork to make a flat cookie shape. Bake for 20 min or until the top of the cookies is golden. Cool and enjoy!  


No sugar added, Healthy omega 3 and omega 6 fats, Gluten free, and Soy free.

70 calories and 1 fat per serving (makes 9 big cookies)
